Vendakai mandi – November 19th, 2013

Vendakai (Ladies Finger) Mandi is an authentic Chettinad dish. It is a side dish most suitable with curd rice. It is a delicious dish that is a regular part of Chettinad wedding lunch. It is tasty and healthy.

INGREDIENTS

Ladies Finger 1/4 a kilo
Onion (big) 1
Rice Soaked Water – 1 cup
Green or Red Chillies – 6
mustard – 1 tea spoon
uradhal – 1 tea spoon
oil – two tea spoons
curry leaves – a few
Tamarind – 1 lime size
Salt – To taste

PREPARATION

First take one cup raw rice and soak it in water. Take that water and keep it in a bowl aside. cut the ladies Finger into 3 to 4 cm long. cut the onions finely and the green chillies into small pieces. Soak the tamarind and extract its juice.

Now put a khadai in the burner and pour the oil. When it heats up add mustard. When it spurts, add the uradhal, curry leaves and chillies one after another. Now add the ladies finger and stir well. When the ladies finger becomes wet free, add the rice soak water and the tamarind juice to it. After ten minutes add the salt to it. When everything blends and thickens and still in the water form, switch off the burner.

Note: You can use the raw rice to either cook or grind for the idly flour.
